I've done this multiple times. Just go to the recovery menu and install CFW over OFW, no need to toggle the exploit again. And yes, you can't downgrade that way, true.

You activate the exploit in toolset once, it stays activated permanently. This activated exploit then allows you to install any custom firmware you want to install. You can also go back to official firmware again, if you want to (for example if there is any problem with the firmware), and then...
