Ok I figured out the issue. It seems that the SSD I was trying to use (Crucial BX500 500GB) is just incompatable. I changed to a Samsung 860 Evo 1TB and it just worked. I'll also quickly write out the settings I used. I made sure to use Grim Doomer's OPL, followed by formatting the SSD to exFAT...

That's fair. I decided to go the exFAT route but still having the issue with the OPL GD.

I wasn't to begin with but then I changed to the grimdoomer fork and it still wasn't working unfortunately.
