I can confirm that Gitaroo Man (US and EU) now works. Shadow of the Colossus does too, but it worked for me on version 1580 as well. Perhaps because I run it from HDD or because it is the PAL version?

Nah, still confused. It turns out that SCES-53926, Buzz! The Big Quiz, actually just needs compatibility mode 1, accurate reads, in order to stop stuttering. The DMA setting has no effect, just as I assumed (because I have a SATA drive). These games are so similar that I keep mixing them up...
