PS3 Is there a way to remove PHOTO/MUSIC/VIDEO/TV etc categories?

I never use those - just play games.
I never go online - banned (but I got valid replacement ID if I need to get on) so if it is a red flag to PSN, not a concern

I just need GAME/USERS and SETTINGS

Is there a tool (or method) to only select categories I want?
 
This is fairly easy, so I'll keep it short. You need the xmb_plugin_normal.rco and the xmb_ingame.rco. Grab each from your dev_blind.

Then, extract with rco mage. After that, go into the main xml file, and delete the tiers you don't want from Object Tree/Page name/XMenu name/XMList name. After that's done, scroll to XMenu - menus: "0xa." Now, change that to reflect how many tiers you want. "0xa" = 10; "0x5" = 5. It's that simple.

My follow up question.... is there any way I could brick my PS3 if I create and replace the RCO's with "malformed" one?
*I am keeping backups of originals

Say if I replace and reboot, could it NOT boot or not initialize WebMan to where I cannot FTP to the PS3 to put back the original RCO's?

Yeah it's possible, worst case you would just need to use safe mode to reinstall your HFW or CFW PUP depending which one you are on now.
