The vita uses a local trophy database file, so you can open it with sqlite browser and unlock just the platinum. Do note that it will be undone if you rebuild the database.

btw, I've got some more information for you. the trophy database is located here (open in sqlite browser). unlocked cell = 0 for locked; 1 for unlocked; grade = 0 for the platinum trophy iirc, so you know you're unlocking the right one. remember, the game must've been opened at least once to add the trophy data to the database:
ur0:user/00/trophy/db/trophy_local.db

You can even rename trophies in that file. I don't know what might happen if you tried syncing or if it would even work. I've heard of people who've heavily hacked their trophies on the vita and haven't been banned. Sony really doesn't seem to care about that system.
