Does overclocking affect the performance of PS1 or PS2 games (PS3 Slim with the games installed as PKG or ISO WebMan)
Does it affect the lifespan of the console?
What is the recommended FAN speed?

The outcome is variable. It depends of the CPU/RSX demand of each game. In general, OC can increase the performace a few FPS but in some games could be barely noticeable, unless you make a comparison side-to-side.

There is not enough information about the subject. Any answer is pure speculation. But it's expected that the lifespan be affected specially on phat consoles with 90nm that can overheat easier than other models and affect the solder joints.

What is the recommended FAN speed?
It's widely accepted that a target temperature of 68°C or lower on XMB and under 78°C in-game is acceptable.
The FAN speed depends of many factors (current PS3 temperature, tasks being performed, ambient temperature, PS3 model, etc.)

Is there a recommended configuration? (If OC provides options)
OC does not provide options. To change CPU/RSX speed it's required to reflash CoreOS, due OC is a static patch applied to lv1.self.

I'm sorry for not understanding but does this affect or not affect PS1 and PS2 games specifically? I just want to know if the overclock is used in those games even if it is not noticeable. Thank you very much for answering my questions and for being so close to the PS3 community.

1. It does affect emulation, like aldostools said, but note that most emulators will cap the frame rate at the original, so emulating an old system, such as the original NES, would probably not result in a noticeably better performance.
2. It can, and not in a good way. Overclocking means higher chance of overheating, although if it's a slim then it's not as bad as the fat ones - but not to the point where you can straight ignore it on OC.
3. You'd probably want to use dynamic fan control like everyone, and set the target temperature to 68℃ as usual. The overclocking would mean that the fans would go faster to keep the CPU / GPU at that temperature though. In the case of PS2 games, where dynamic fan control is not possible, you would need to set the fan speed higher than usual.
4. Unfortunately there's no configuration. You can't toggle the overclocking on / off without reinstalling the CFW.
