The good news for playstation fans is sony and epic was working together developing that technologies used in UE5 and creating the demo, and it was running in a PS5, so we can bet all that features from UE5 are going to work very well in the PS5
The same technology is going to work in PC and XBOX, but by now it looks UE5 is optimized for PS5, and thats big words
We all know who's the faster console, the fact that epic games ceo says that you know something is good, he has seen and played ps5 no one says that without knowing anything about the console. Like i cant say anything without playing, you neither. Epic ceo said that PS5 SSD is far ahead High End PC-s, because its a custom SSD. No one would like to showcase their engine in a console that doesnt have potential PS5 has huge potential thats why unreal engine 5 was showcased in ps5, the fact that xbox cant show its own unreal engine 5 tech demo or any gameplay shows that something is bad on their side. Xbox hasnt show any next gen thing yet, none of games they revealed looks like next gen.Keep in mind that Epic Games always had a high interest in making their Engine on many platforms as much as possible so there is no 100% confirmation that PS5 is now better/faster than Series X or vice versa. And I bet when there are Xbox Exclusives such as the Gears Series (Gears 5 is confirmed for Series X), then I bet they "work" with Microsoft together as well.
Edit: And yes this example is for an "old" Game but this is what both the videos from Digital Foundry and the written Statement from Epic Games itself tried to explain with that "UE 4.5" Version of their Engine. Epic Games actually recommend that Developers still use Version 4.5 in the beginning of the new Console Generation, especially for those "Ports" as Gears 5 mentioned in the example. So don't be suprised when new Games for both PS5 and Series X still will use Version 4.5 or even UE4 only.

The way how it works UE5 allows them to have infinite detail of the geometry (polygons), is going to have photorealistic quality in close distances but also in landscapes, just to mention an example, in a open filed if you take a snipper rifle and you make a huge zoon to some mountains located kilometers away from you... the game is going to load that area of the map at the higest quality posible (like if you was located very close to it)
This requires to load huge amounts of data at the fastest speed posible, and like they said in the interview the PS5 is in the "god-tier" of storage speed performance
As said... yeah, in a matter of couple of years the PC's are going to catch the PS5, but there is not much people that is goign to build a PC with higer specs than the PS5 in that matter, specially considering the PS5 seems to have that "kraken" data compression (dont remember if it was made by hardware, but incase is hardware this is not going to be posible to beat in PC because the kraken is a sony exclusive)
And i dont think there is any game built completly in UE5 by now, probably they have been promoting it since monts ago to some game companies (internally, in secret), even before UE5 was completed, so maybe there is some game in progress but is just in his first steps
