Hello world. There are a few reasons why I decided to go ahead and register here but the main one is my PS3s. I have two of them that were, up until a couple weeks, collecting dust in a closet. - A CECHA01 and a CECHE01, both have the YLOD. I'd like to get into the world of electronics repair with the main goal of bringing both of these back to life someday.

Thing is, I'm a complete noob when it comes to electronics repair, I've never held a soldering iron or a multimeter. I've watched a good amount of videos from various people making good use of them- Odd Tinkering, My Mate Vince and MattKC are a few examples - and I do have one of my own irons sitting here in its box, but that's it, I don't have any clue on where to begin. I have read up on a couple of RIP-Felix's posts about where to begin when it comes to troubleshooting YLODs and the first step that they suggest involves soldering a SYSCON chip. So yeah, I haven't taken a step and there's already a giant hurdle for me.

Now before someone says "Dude, forget it, this is way out of your league, go find someone to do it for you" let me I say that I actually do want to learn, electronics have been a huge part of my life so I believe it will only help me in the long term if I start learning instead of always leaving others to do so. It's the "teach a man how to fish, feed them for life" saying. Plus it's not just these PS3s, it could be anything, for example the various other consoles that I'd like to repair, one of them being a PS2 39001/N that has no power light when plugged in.

In addition to those I have two more PS3s both of which I recently found and bought at a thrift store - a fat CECHH01 with the YLOD, and a slim CECH-2101A that powers on but is completely unresponsive beyond that - I imagine these aren't as valuable as the former two I mentioned, so I bought them on the premise that I can use them as practice first before going onto the real things.

By the way, I do have a library of physical PS3 and PS2 games, I also have a few more PS2 consoles besides the one I mentioned, but... eh, I don't think any of it is worth showing off.

So yeah. Hopefully this forum post is a first step. Any advice on where should I start? What're the best things to read/watch when first starting out with this sort of thing? What sort of project should I try first? Thanks everyone.

Welcome to psx place man. You will find an abundance of knowledge within these halls to help with any question you may ever have regarding a Sony console or another.
I would suggest posting in the syscon thread itself asking for help to be able to diagnose the first 2 ps3 you mentioned. Once you have the few pcs of hardware you need to be able to diagnose what is going wrong on those, you can then post your bringup commands in the thread and have the experts tell you what to do next.
If you have never soldered before I would recommend trying on something that you don't care about. A small kids toy , anything that has a small circuit board you can practice soldering, and desoldering wires to. I learned just by going for it and was able to install an e3 flasher and e3 linker my first time.
Any time you get stuck you can post a new thread and ask for help. Once you get acquainted with the community here you can figure out who is the best person to go to for whatever help you need.
Good luck!
