There are none proprietary file systems on PS3 HDD. Partitions (because there are many) using FAT16, FAT32 and UFS2. Some doesn't have any filesystem.

The only proprietary fs which Sony ever used was APA+PFS in PS2 HDD (if we can call APA a file system, it is some kind of mandatory header glued to every partition, yet can contains data like executable, icon etc.), MCFS in PS2 MC (both by Sony) and TexFAT (by Microsoft) on PSV/PSTV internal flash partitions and memory cards. ;)

Unlocked reserves stick to UFS2 because it is one the features of this fs. The same can be done on PS4 because it also using UFS2 (at least on partition no.27).
What about the partition table?
 
@wishing4thesun Precise Your question. Are You asking about custom partition tables? In all Sony consoles, except PS4 and probably PS5, they using their own strange formats (i.e on PS2 it is inside __mbr (do not mislead it with Master Boot Record); on PS3 it is modification of bsd partition table, on PSV some blob in SBL section). Memory cards don't have any partition table, on those fs occupying whole space (simple index on PSX; MCFS in PS2; FAT32 on PSP; TexFAT on PSV/PSTV).
 
One correction: in PSP case, actually Memory Sticks Pro Duo using MBR as partition table, yet only first partition is recognized by console. PSV can also use exFAT instead to TexFAT.
