as of now I've installed succesfully the CFW on the Slim model and I have some other questions:
1) In case of internal HDD failure, which steps should I follow to restore the CFW on the PS3 after replacing the internal drive ?
2) Currently, some PS2 games like Gran Turismo 3 and Gran Turismo 4 stutter while emulatimg, need a "Custom config" to work properly. How can I do that ?
3) To launch PSP games, which loader do you suggest me ?
4) Instead of using the default MultiMan launcher, is it a good idea to use webMAN MOD ? Which advantages will I get using this ?
5) Talking about HEN (I still have to install it on the Super Slim model), is it safe to go online for playing ?

First of all - since you have full CFW, the first thing you want to do is to dump the ERK and save a backup somewhere safe. It can be used to decrypt the HDD on your PC should your PS3 ever fail.
As for your questions -
1. If the HDD ever fails and you need to replace it - just replace it with a new drive (note that the PS3 does not support drives bigger than 1TB) and let the PS3 format it. It'll then ask you to insert a USB disk with firmware. Insert a disk with CFW at that point. Do not install OFW or you'll have to go through the entire jailbreak again. It'll accept CFW but it has to be the same version or higher than the one you had before replacing the HDD.

4. The first reason you want to have webMAN MOD is for another reason entirely - it has a dynamic fan control function and it usually does a better job than Sony. It can help prevent your PS3 from overheating (but that's not an excuse for not maintaining it!). Other than that, the biggest difference is that webMAN MOD is not an app by itself, but rather an XMB plugin that runs in the background. It has a web interface, which means you can mount games using your browser on a PC or phone, and if you'd rather do that locally, it also allows you to mount games directly from XMB, without having to launch anything prior. Also it allows you to use background services like FTP while playing games (not PS2 games though). The one thing it can't do however is rip physical discs to ISOs, so you would want to keep multiMAN for that.
5. If you want to go online on a PS3 that has HEN, the best thing to do is reboot it and not enable HEN at all. It's relatively safe but can never be 100% safe. I'd say it's probably as safe as disabling syscalls on CFW. If you have fake trophies you'll still get banned because restarting the console does not erase them, and playing CoD BO2/3/later CoD titles can still get you banned because they search the internal HDD looking for any signs of homebrew, doesn't matter if it's running or not. Other than that the risk is minimal but I can't say it's 100% because it never is. Do not use your main PSN account on a jailbroken PS3 if you have anything valuable, especially if you also have a PS4 and/or PS5 on the same account. If you want to use your main PSN account you'd probably want to revert your secondary PS3 back to OFW
and reformat the HDD to remove all traces of hacks and use only that.
