I use retroarch to play mainly Sega Genesis games, and it works great. However Is it possible to enhance the interface of Retroarch to make it more like Irisman, which simply displays a game cover that you select to play. This would make it much more simpler for my young nephew to play his favourite Seag games too.

Sure, it is possible to make changes to the GUI source code & recompile it but unless you are a c/c++ developer, I don't think you will be able to do it yourself.
Keeping in mind also that Retroarch is not the easiest ps3 project to compile to begin with & the original version is to be compiled with the official sdk (under license). The open source psl1ght sdk version of Retroarch is still WIP.
 
Retroarch has a couple of themes baked in if I'm not mistaken. Found in the settings menu.

You can also add your own cover art to retroarch. To be displayed when highlighted in the submenus.
