Must-have are:
The rest is up to you. No need to install anything that you don't want nor know about.
- WebMAN MOD
- multiMAN
- Apollo Save Tools
- File Manager (from ManaGunZ)
- Artemis (if you want to have some fun with GameShark like cheats)
- GamePad Test (a little app used to test if your controller is working properly and has SIXAXIS)

you dont recomand PS3_Unlock_HDD ? to maximise the hard drive ? or maybe it have a bad effect on data ?

PS3_Unlock_HDD is ok. It's included in CFW Evilnat. webMAN MOD also lets unlock HDD with web command: /unlockhdd.ps3
reActPSN is practically obsolete and not compatible with HEN. Cobra/HEN can apply rap files automatically. Apollo can export/import raps.
FTP server is integrated in almost every homebrew: IRISMAN, multiMAN, ManaGunZ, etc. webMAN MOD has an FTP that runs all the time. CFW Evilnat also integrates an FTP server.
Movian M7 is a must have tool to watch movies from torrents, mkv and other formats not supported natively by PS3.
IRISMAN, multiMAN and ManaGunZ do almost the same with little differences in features. Choose the one that meets your needs.

ive seen people say ssd's on the ps3 have issues, like i know the ps3 doesnt have TRIM support but what other issues are there ?In Network > CFW Tools > Service Tools > Advanced Service Tools > Toggle HDD Space you can unlock the extra 8% space.
On a side note, I would advice against using an SSD in your PS3. Those drives are not compatible with the console and can cause issues.

the guy who translate the cfw in french dont did a good job in translation ^^ the service tools he call it Options Recovery... ^^ now is fine ^^

is an app to stress test the CPU and the GPU to check the stability ? i wish to go when it will be avaible to the CFW with overclocking possibility. I dont know if is a good thing to do on PS3 but im used to do that since year on PC. (i delied my PS3 Slim 2104B)
To play Playstation 1&2 games no need emulators right ?

Don't really know for sure. I've been using MultiMAN only to rip my PS3 games and the file manager to edit some of the dev_flash files. But now Evilnat's CFW 4.90 plus WebMAN MOD have everything I need from the XMB. IRISMAN is also a powerful tool to have.
And for the file manager, I use they one from ManaGunZ installed apart or via FTP with FileZilla.
It's a matter of personal preference and taste at this point.

All share many of the same functions and are classified as homebrew apps that are backup manager's.
You can have all 3 installed at the same time with no conflicts or anything, While they all share many of the same functions of a backup manager, they all have unique features of their own. So they are not exactly the same but they are not different, but they also give a unique experience as well. So its best to try all and see what fits your needs and personal taste. .
webMAN MOD is a plugin that runs in the background and contains many features that a manager above provides. Sometimes in a different way, but it also offer's many unique features and abilities that the homebrew apps can't/don't perform.
I have all 4 setup on my PS3.. i tend to use webMAN MOD for most task. but i do like to lean on the other apps for various task. Some like multiMAN file manager, where some people hate it, Some people prefer remote file manager's like webMAN MOD or FTP access. So it just comes down to needs and personal preference..
All 4 of those projects are made by very experience developer's and you can't go wrong with any choice.

multiMAN is no longer maintained. However the good news there is no longer any kernel changes in the PS3 firmware where changes and new support is needed. Only side affect has been the firmware version being displayed wrong (that's a normal bug now)
